Baked Oatmeal

This baked oatmeal is great for house guests, or for making ahead and keeping in the fridge for ready-to-go breakfast before work or school. Customize with your favorite seasonal fruits, nuts, and Runamok maple syrup combinations.

Runamok Maple - Recipe Baked Oatmeal

Ingredients

  • ½ cup coconut or vegetable oil
  • ⅓ cup Runamok Sugarmaker’s Cut pure maple syrup
  • 2 eggs
  • 3.5 cups old-fashioned oatmeal
  • 1 cup milk (whole or 2%)
  • 2 tsp baking powder
  • 1 tsp salt
  • 1 tsp cinnamon (optional)
  • Blueberries (or mix in of choice!)
  • Extra Runamok barrel-aged, infused, or pure maple syrup for topping

Instructions

  1. Preheat oven to 350.
  2. In a large bowl, mix together the oil, maple, and eggs. Add the remaining ingredients (except the extra maple syrup) and stir until well incorporated.
  3. Pour into a lightly buttered baking dish (no bigger than 9x13.) Bake for 35-45 minutes depending on the size of the dish.
  4. Serve warm topped with more maple syrup, or cool and store in the refrigerator to enjoy throughout the week.
