Chai Spiced Hot Cocoa

Chai (aka masala chai) is that milky, sweet, mildly spicy tea you can find in Indian and South Asian restaurants.  Spices include cinnamon, clove, fennel, cardamom, black pepper, and ginger. We’ve combined these warming spices of our infused maples along with hot cocoa for an ultra-cozy, cold-weather beverage. 

Runamok Maple - Recipe Chai Spiced Hot Cocoa

Ingredients

For chai spice blend

  • 3 tsp ground ginger
  • 2 tsp ground cinnamon
  • 1 tsp ground cloves
  • 1 tsp ground nutmeg
  • 1 tsp ground cardamom

To make the chai

  • 4 cups Whole Milk (or any milk substitution)
  • 1/4 cup cocoa powder
  • 1 1/2 tsp Chai spice blend
  • 3 tbsp Runamok Cinnamon + Vanilla maple syrup (to taste)

For whipped cream

  • 1 cup heavy cream
  • 2 tbsp maple syrup (Cinnamon+Vanilla, or Sugarmaker’s Cut)
  • Star anise (optional garnish)

Instructions

  1. Make Chai spice blend by whisking together the spices. Store any unused spice in an airtight jar.
  2. Combine milk and remaining chai ingredients in a medium saucepan and whisk until smooth. Simmer over medium heat for 3-5 minutes, whisking until all ingredients are well incorporated.
  3. To make whipped cream, combine all ingredients and whisk until stiff peaks form.
  4. Serve hot cocoa immediately in mugs with whipped cream, garnishing with star anise (optional) and chai spice blend.
